3 Step Sweet Potato Quesadillas
Ready for more sweet potato recipes? Here is a delicious and tasty one I often enjoy for lunch. This is a fantastic way to use up extra veggies (leftovers from dinner maybe?) as really any vegetable combination will work. Just roast a sweet potato one night while you are making dinner and keep it in the fridge to allow yourself to make these tasty quesadillas in MINUTES!
Sweet Potato Quesadillas
Serves 1
1/2 cup roasted sweet potato (sliced)
1/2 cup assorted other veggies – I like zucchini, red pepper and red onion
1 – 2 T. crumbled goat cheese
1 whole wheat tortilla
sea salt
Step one: Arrange the veggies on half the tortilla. Sprinkle with goat cheese.
Step two: Fold tortilla in half and broil for just a few minutes (keep your eye on it, it can burn quickly!!!)
Step three: Sprinkle a bit of sea salt on top and enjoy.
Pretty easy, eh?
A few weeks ago I shared some of the nutritional information on sweet potatoes, and I mentioned that enjoying them can help curb sugar cravings. Well, you guys wanted to know why, so here is the “science” behind it:
Sweet potatoes contain chromium. Chromium stabilizes blood sugar. When you are chromium deficient (which many of us are), you are likely to have high blood sugar. You are also likely to have sugar cravings – so increasing your chromium levels (hence the sweet potatoes) will help reduce those cravings – as well as doing a whole bunch of other good things for your health!
Hopefully these recipes and education will encourage you to start incorporating sweet potatoes into your weekly diet. I’ve convinced half my family to eat them, still working on the other half!!!
