A new twist on an old favorite – the Blueberry “Rita”

So last night we had Mexican for dinner.  That happens a few times a month around here as everyone in the family loves it, and it’s guaranteed success.  Plus, I can really load up on the veggies for the kids – the more I set out, the more they add to their burritos!

Often I’ll make a couple of Margaritas for the adults.  Last night I decided to create a little twist on our typical margarita.  Twist on a margarita

Delicious!  These will make frequent appearances at our dinners this summer . . .

The Blueberry “Rita”

-makes 2 drinks

2 oz. simple syrup (see my “real food” version below)

2 oz. fresh lime juice (about 3 small but juicy limes

2 oz. tequila (the better the quality, the tastier the drink as you’ll really taste the liquor!)

2 oz. triple sec or Grand Marnier

10 – 12 frozen or fresh blueberries

extra lime for garnish

Step one:  Run half a cut lime around the rim of your glass and dip the rim in salt.

Step two:  Place half the blueberries in each glass and muddle with a spoon slightly to release the juices.

Step three:  Mix the simple syrup, lime juice, tequila, and triple sec with ice in a shaker (or use a mason jar like me!).  Shake well.

Ball Jar shaker!

Step four:  Pour over blueberries, add a squeeze of fresh lime and ENJOY!

If you like margaritas, I highly encourage you to give this recipe a try.  It was simple, refreshing, and much better for you than a pre-made mix full of food coloring and preservatives.  (At least as much better for you as an adult beverage can be . . .)

“Real Food” Simple Syrup – in a small saucepan, heat 1/2 cup honey with 1 cup water until well mixed.  Store in the fridge and use as needed for cocktails, lemonade, etc.
