Bananas turning brown? Make Banana Bread!
If you are anything like me, even with your good intentions of using up all the fruits and veggies you purchase each week, you still end up with leftovers that aren’t quite fresh enough to eat . . .
If you have a few of these beauties hanging out on your counter, try making this delicious banana bread – it’s the perfect vehicle for using up sad, brown bananas!
Makes 1 loaf
1 stick butter, softened
3/4 cup organic cane sugar
1 1/2 t baking powder
1/2 t baking soda
2 eggs
1 1/2 T milk
squeeze fresh lemon juice
1/8 t sea salt
2 cups flour
Optional, 3/4 cup chopped nuts or chocolate chips
Step one: Preheat oven to 350. Cream butter, sugar, eggs, and bananas. Add in the baking soda and baking powder and mix well.
Step two: Add milk and squeeze of lemon juice along with salt. Mix.
Step three: Add flour and mix just until combined. Fold in nuts or chips if using. Pour into greased 9 x 5 loaf pan.
Step four: Bake for 45 minutes to 1 hour or until a fork inserted in the center comes out clean.
Bananas are a great source of potassium and fiber, and this bread is a perfect after-school treat, or slather with warm apple butter and enjoy for breakfast with a hot cup of coffee. YUM.
