Fix It and Forget It Pork Carnitas
Just like last week’s White Chicken Chili, this week I’m sharing another simple, delicious and healthy dinner. This one is even easier, and QUICKER than last week – and also tastes just as delicious the next day. Perfect for your busy holiday season, right?
Fix It and Forget It Pork Carnitas
2-3 pounds pork roast (or if you are out of pork roast like I was, use four pork chops!)
1 cup salsa (green is preferable, but if you are almost out of green, red is fine – apparently I need to go to the store!)
corn tortillas
Toppings:
shredded cheddar or jalapeno cheddar cheese
2 avocados
1/2 red onion, sliced
2 limes, cut in wedges
sour cream
tomatoes, sliced (grape tomatoes are fine if it’s winter and the large ones are icky)
Step one: Place your pork in your crock pot and cover with salsa. Set on low (8 to 10 hours) and let it cook all day. Midway through the day, I did open it up and mix it all around.
Step two: Shred pork with two forks, heat your tortillas in the oven or on the stovetop and let everyone top their own however they would like.
It’s THAT simple!!! You might even have time to make yourself a tasty margarita to enjoy alongside!
