Trying to find an easy, quick and healthy meal that everyone in your family will eat?  How about pizza on the grill?Pizza

It’s fun, easy and can be very healthy.

Pizza on the Grill – makes 4 mini pizzas

pizza dough (make it fresh or buy pre-made – just watch the ingredients)

red sauce (or not!)

mozzarella or other cheese

variety of toppings

coconut oil

Step one:  Pre-heat your grill and rub a little coconut oil on the grates – this will help keep the dough from sticking.

Step two:  Divide your pizza dough into four sections and flatten to your desired thickness

Step three:  Prep the toppings – I like to chop everything up (lots of veggies) and set them on a cutting board on the table.  Let everyone make their own pizzas.  I’ll give a few topping suggestions below.


Step four:  Slide the mini pizzas on the grill (set flame at medium low) and cover.  Let it cook about 8 – 10 minutes – check frequently since they cook quickly to make sure your crust doesn’t burn.  When the pizzas are done, let them set for a few minutes and enjoy!


Suggested toppings:

  • goat cheese, red onion, zucchini and lemon zest
  • red sauce, mozzarella, peppers, mushrooms, sun-dried tomatoes and spinach
  • mozzarella, Roma tomatoes and basil
  • red sauce, mozzarella, mushrooms and black olives
  • feta cheese, kalamata olives, roasted chicken and spinach

You get the idea!  I typically just pull out all the little bits of leftover veggies and meat in the fridge and we create from there – it’s a great way to finish off leftovers!  This is also a really fun dinner to serve to guests – add a nice big salad and you’ve got a fun, tasty dinner!
