My Favorite Fall Soup

As soon as the weather starts getting cooler, I think of this recipe.

Yum! Doesn’t that look like Fall?

It is simple, delicious and healthy.  Add a side of warm corn bread and honey and you have the perfect fall meal.

One of the other fantastic things about this dinner is that you can put it together in less than 10 minutes in the morning and it will be ready to eat whenever you are ready later in the day.  It’s a perfect meal for busy nights of sports practices, meetings and homework.  The leftovers also make a wonderful lunch the next day.

Favorite Fall Soup

2 cans or jars of great northern beans

1 stalk organic celery, chopped

1 organic carrot, chopped

1/2 organic onion, chopped

1 cup diced ham

2 bay leaves

1 to 2 cups water

sea salt

cracked pepper

1.  Rinse beans and add to a crock pot.

2.  Add rest of ingredients (salt and pepper to taste).  Water is dependent upon how “soupy” you like your meal – one can and it’s more of a stew, two and it’s more of a soup.

3.  Cook on low for 6 to 8 hours.
