Healthier Creamed Spinach
Typically when I serve spinach, I simply saute it. It’s healthy, tasty, and FAST.
When I go to a nice restaurant, I’ll often order creamed spinach – I love it, but I know that it’s full of fat and probably not the best ingredients for me – it can take a super healthy vegetable into a high-calorie nightmare!
So, I’ve come up with my own version of creamed spinach – it’s still FULL of flavor, but a lot healthier as the main ingredient is still spinach:
Healthier Creamed Spinach
large bunch of fresh spinach – at least 5 or 6 cups
2 cloves garlic, minced
2 T milk
3 oz. cream cheese
2 – 3 oz. manchego cheese (or you could use swiss or extra parmesan)
olive oil
sea salt & pepper
sprinkle of parmesan
Step one: Clean your spinach and dry as well as possible. Saute garlic in olive oil until starting to sizzle.
Step two: Add spinach and saute until wilted – you may have to add it in batches. Add milk and cheese and stir until completely melted and incorporated into the spinach. Season with salt & pepper and sprinkle on some parmesan.
This was so tasty and so easy – the perfect side dish to anything you’ve placed on the grill!
