Tuesday – Braised fish, asparagus salad, corn on the cob
Wednesday – Chicken Pad Thai
Thursday – Potato Salad, Steak, tomatoes
Friday – swim meet – so sushi to go!
Saturday – Italian tostadas, kale salad
Sunday – brunch somewhere fun & leftovers!
I didn’t get around to making Baked Oatmeal last week, so I’ll make that and I’ll help my daughter practice making muffins for 4-H. Plus, I started some sprouts this morning for the Chicken Pad Thai Wed – they should be ready to go by then!
Do you celebrate Cinco de Mayo? Do anything special for Mother’s Day? What do you do? I’ve found my kids love it when I tell them it’s a “special day” – even if it’s one I made up just for them!
