As I’ve mentioned before, planning out your meals each week is the BEST way to ensure you eat healthier, stress less and save money. Who doesn’t want all that? So, since menu planning is something I do each week, I thought it might be useful to share my menu plans – I probably won’t do it every week, but I’ll aim for at least twice a month.
Monday – Roast Chicken, collard greens, sautéed veggies
Tuesday – Chimichurri Fish, sautéed snap peas, oven fries
Wednesday – Fried rice (using leftover chicken from Monday), edamame
Thursday – Pork Tenderloin with warm slaw
Friday – Date night
Saturday – Event with friends (appetizers: fruit salad, veggies and dip)
Sunday – Arroz con pollo
Plus, I’m going to try some yummy looking muffins from The Pioneer Woman Cooks: Recipes from an Accidental Country Girl for my weekly coffee shop date with the kids! I put together my list on Sunday afternoon and hit the grocery store, so I’m all set for an easy week of yummy dinners!
