Last week I shared with you one of our quick and easy dinners, and while we love it, it’s not our favorite weeknight meal. That honor probably has to go to this one . . . once again this is more of a formula than a recipe, but it is ALWAYS a hit in my house. I can count on my kids gobbling it up.
Mexican Feast
3/4 lb. hamburger
cumin, chili powder, ketchup, chopped garlic
1 can (or equivalent dried) black or pinto beans
2 cups cooked brown rice
veggies (peppers, tomatoes, lettuce, onions)
chips
salsa
shredded cheese
sour cream
sliced avocado or guacamole
corn or wheat tortillas
Step one: Prepare the meat – I typically mix in chopped garlic, cumin, chili powder, water, and a little ketchup until it tastes good – play around with the quantities until you get a flavor your family likes. Heat the beans in a saucepan.
Step two: While the meat is cooking, chop your veggies and set them out on a serving platter. Add the other condiments (sour cream, salsa, cheese, guacamole, etc.)
Step three: Give each person a plate and let them have fun creating their own dinner. With these ingredients, you can make tacos, burritos, taco salads, rice and bean bowls, etc.
It’s easy, fun, creative, and makes TERRIFIC leftovers! My favorite is a combination of rice, beans, sour cream, guacamole, salsa, and lots of veggies!
