Sadly the summer veggies are gone. I hate to see the season of juicy tomatoes and crisp corn on the cob end.
In the summer it’s EASY to eat lots of vegetables. There are so many fresh, delicious and healthy veggies available – and at such great prices.
Now that the weather has turned, you can still buy tomatoes in the store, but why would you want to? If you’ve enjoyed a ripe, just picked from the vine tomato in August, you KNOW that the ones you buy now don’t hold a candle to it.
So don’t bother. Enjoy vegetables that taste GOOD this time of the year.
Now is the time to dust off the recipes for regular and sweet potatoes and squash!
[tweetherder]This week I challenge you to enjoy fresh fall and winter veggies at least three times this week.[/tweetherder]
Need some inspiration? Here are some of my favorite recipes:
- Sweet Potato Chips
- Roasted Butternut Squash
- Butternut Squash and Apple Soup
- Baked Potato Soup
- My version of French Fries
- Fake Spaghetti
What winter veggies will you enjoy this week? How do you like to prepare them?
