Tuesday Challenge – Try something green!

In honor of Saint Patrick’s Day this week, your weekly challenge is to try something green! kalechips

In other words, add a new green veggie to your diet this week.  It could be spinach, kale, a new variety of lettuce, fresh green beans, even sprouts!


Most Americans are not eating enough green vegetables.  Heck, some aren’t eating ANY green vegetables.  And sadly, those that do eat some greens, often eat low nutrient value iceberg lettuce.  The dark, leafy greens are especially valuable as most contain minerals such as calcium and iron, folic acid, and vitamins A, C and E.  In addition, they are an excellent source of carotenoids, phytochemicals and micronutrients.  All of this in one vegetable!


This one couldn’t be easier.  Just go to the store, buy something green, bring it home and prepare it!  Need some inspiration?
