Blackberry Bake

Want to enjoy a decadent (but healthy) treat? Blackberry Bake!

Remember last summer when we preserved all those blueberries and blackberries?  Well here is my favorite way to use the blackberries (although it’s good with blueberries too).  Technically this is a dessert, BUT . . . it’s really pretty healthy so I often enjoy it for BREAKFAST!  How’s that for indulgent?  It’s bursting with fruit, warm, comforting, just a fabulous way to start (or end) the day.

4 cups blackberries

1 and 1/2 cup oatmeal (not the quick cook kind)

1/4 cup whole wheat flour

1/2 t. cinnamon

1/2 t. vanilla

1/4 c. maple syrup (the real stuff, Grade B preferably)

1/4 c. coconut oil, melted

Step one:  Pre-heat oven to 350.  Place blackberries in a 9×9 pan.  Don’t worry if they are frozen – frozen works just fine.

Step two:  Mix the rest of the ingredients in a small bowl and spread evenly on top of the berries.

Step three:  Bake about 45 minutes (or until the berries are hot and the topping is slightly browned.

Blackberries are terrific for you – they have about 4 grams of fiber per half cup and are full of Vitamins A, C and K.   I do love a food that tastes great and is good for you too – that is ALWAYS my cooking goal.
