I try to serve fish at least once a week – it’s healthy, quick and we all love it. Often I grill salmon, but last week when I went to the store planning to buy some salmon, it just didn’t look very fresh. So, I picked up some cod and made this instead:
1 pound or so of firm white fish filets
1/2 pint cherry tomatoes, sliced in half
3 T olives, sliced
2 garlic cloves, minced
2 cups fresh spinach
Step one: season fish with olive oil, salt and pepper; sprinkle tomatoes, olives and garlic on top, place on heated grill
Step two: when fish is almost done, add spinach and continue grilling until fish is flaky and cooked through
Enjoy! Simple and delicious!
